Chicken butter masala

Chicken Butter Masala, also known as Butter Chicken, is a popular North Indian dish known for its creamy tomato-based sauce. Here's a basic recipe for making Chicken Butter Masala:

Ingredients:

For Marinating Chicken:
- 500g boneless chicken pieces, cut into bite-sized cubes
- 1 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste

For the Butter Masala Sauce:
- 2 tablespoons vegetable oil or ghee
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 cup tomato puree (from fresh tomatoes or canned)
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1/2 teaspoon garam masala
- 1/2 teaspoon coriander powder
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon cinnamon powder
- 1/4 teaspoon sugar
- 1 cup heavy cream or full-fat coconut milk
- Salt to taste

Instructions:

For Marinating Chicken:

1. Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric, and salt. Let it sit for at least 30 minutes or longer in the refrigerator.

For the Butter Masala Sauce:

1. In a large skillet or pan, heat vegetable oil or ghee over medium heat.

2. Add chopped onions and sauté until they turn translucent.

3. Stir in ginger-garlic paste and sauté for a few minutes until the raw smell disappears.

4. Add tomato puree and cook for about 5-7 minutes until the oil starts to separate from the sauce.

5. Add red chili powder, garam masala, coriander powder, cardamom powder, cinnamon powder, and sugar. Mix well.

6. Pour in the heavy cream or coconut milk and stir until well combined.

7. Add marinated chicken and cook until it's fully cooked, which should take around 15-20 minutes.

8. Adjust the seasoning with salt.

9. Serve Chicken Butter Masala hot with naan, roti, or rice.
