Chicken korma is a flavorful and creamy Indian dish made with tender chicken pieces cooked in a rich and aromatic sauce. Here's a basic recipe for making chicken korma:
Ingredients:
For Marinating Chicken:
- 500g boneless chicken pieces, cut into bite-sized cubes
- 1/2 cup yogurt
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
For the Korma Sauce:
- 2 tablespoons vegetable oil or ghee
- 1 large onion, finely chopped
- 2-3 green chilies, slit (adjust to your spice preference)
- 1 tablespoon ginger-garlic paste
- 1/2 cup cashews or almonds, soaked in warm water
- 1/2 cup yogurt
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon garam masala
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon nutmeg powder (optional)
- 1 cup water
- Salt to taste
- Fresh coriander leaves and sliced almonds for garnish (optional)
Instructions:
1. Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric, and salt. Let it sit for at least 30 minutes or longer in the refrigerator.
2. In a blender, make a smooth paste by blending soaked cashews or almonds and yogurt. Set this paste aside.
3. In a large skillet or pan, heat vegetable oil or ghee over medium heat.
4. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
5. Stir in ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
6. Add ground coriander, ground cumin, garam masala, cardamom powder, cinnamon powder, and nutmeg powder (if using). Stir for a minute.
7. Add the marinated chicken and cook until it turns white and is partially cooked.
8. Pour in the cashew or almond-yogurt paste and mix well.
9. Add 1 cup of water and salt. Stir the mixture and bring it to a gentle simmer.
10. Cover the pan and cook for about 20-25 minutes or until the chicken is fully cooked and the sauce thickens.
11. Adjust the seasoning if needed and garnish with fresh coriander leaves and sliced almonds (if desired).
12. Serve chicken korma hot with naan, roti, or rice.
