Ingredients:
- 1 cup basmati rice
- 2 cups water
- 2 tablespoons vegetable oil or ghee
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped
- 1-2 green chilies, slit (adjust to your spice preference)
- 1/2-inch piece of ginger, minced
- 1/2 cup mixed vegetables (carrots, peas, beans, etc.)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish (optional)
Instructions:
1. Rinse the basmati rice in cold water until the water runs clear. Drain the rice.
2. In a large pot, heat the vegetable oil or ghee over medium heat.
3. Add cumin seeds and let them splutter.
4. Add the chopped onion and green chilies. Sauté until the onion becomes translucent.
5. Stir in the minced ginger and sauté for a minute.
6. Add the mixed vegetables and sauté for a few minutes until they soften slightly.
7. Add the drained rice and sauté for a couple of minutes to coat the rice with the spices and oil.
8. Pour in the water and add turmeric powder, garam masala, and salt. Mix well.
9. Bring the mixture to a boil. Then, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for about 15-20 minutes until the rice is cooked and the water is absorbed.
10. Once the pulao is done, fluff the rice with a fork to separate the grains.
11. Garnish with fresh coriander leaves (if desired).
12. Serve the vegetable pulao hot as a standalone dish or with raita or yogurt on the side.
