South Indian lemon rice (chitranna)

Chitranna (Lemon rice) is a popular South Indian rice dish that is known for its tangy and flavorful taste. It's often made with lemon or lime juice, and it can include various ingredients like spices, lentils, and vegetables. Here's a basic recipe for lemon chitranna:

Ingredients:

- 2 cups cooked and cooled rice
- 2-3 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal (split black gram lentils)
- 1 teaspoon chana dal (split chickpea lentils)
- 1/4 teaspoon asafoetida (hing)
- 2-3 dried red chilies
- 10-12 curry leaves
- 1/2 cup roasted peanuts
- 2-3 tablespoons lemon juice (adjust to taste)
- Salt to taste
- Freshly grated coconut for garnish (optional)

Instructions:

1. Heat the oil in a pan or skillet over medium heat.

2. Add mustard seeds and let them splutter.

3. Add urad dal and chana dal. Sauté until they turn golden brown.

4. Add asafoetida, dried red chilies, and curry leaves. Sauté for a minute.

5. Add roasted peanuts and stir for a few minutes.

6. Add the cooked rice and mix well with the seasoned ingredients.

7. Squeeze fresh lemon juice over the rice and mix thoroughly. Adjust the amount of lemon juice to your taste.

8. Add salt to taste and mix again.

9. Garnish with freshly grated coconut (if desired).

10. Serve Chitranna hot or at room temperature. It's a delightful, tangy rice dish with a unique South Indian flavor.

You can also customize Chitranna by adding ingredients like grated ginger, turmeric, or green chilies to suit your preference.
